Multiple executions of SoapUIPro test steps within a single pipeline works correct for the JUnit reports that are published to Jenkins an available through the "Test Results" within the build page on the left.

JUnit-Style HTML report in the workspace directory and the printable PDF report are only available for the project of the last run within the pipeline, i.e. they are overwritten.

It would be fine to have a list of printable PDF reports available through the "ReadyAPI Test Results" within the build page, one for each execution of SoapUIPro test step within a pipeline.

It would also be fine that the index.html of the JUnit-Style HTML report in the workspace holds the result of all the executions, rather than only the one from the last run of the SoapUIPro test step with a pipeline
